Seriously? Raw Truffle Balls

When Amy fed one of these little balls to her hardworking friend sheep shearer John Sanchez, he closed his eyes and said, “Seriously?”

They provide melt-in-your-mouth fat and protein goodness, and when we want a little kick, our favorite naughty stimulant is chocolate.

  • 3/4 cup raw organic almonds
  • 3/4 cup raw organic pecans
  • 1/2 cup Kirkland Organic Virgin Coconut Oil
  • 1 full tiny spoon (it’s in the bottle) of Trader Joe Organic Stevia Extract powder = 0.15 cc = 0.03 tsp
  • Additional sweetener of your choice (maple syrup, honey, etc.) or none
  • 1 & 1/2 cups organic raw cacao powder
  • 3 large organic pastured eggs
  • 2 Tbsp organic vanilla extract
  • 1 dash sea salt
  • 1/8 tsp organic cinnamon powder, or more to your taste
  • 1/8 tsp hot smoked paprika powder (like La Dalia brand), or more to your taste

Grind together the almonds, pecans, and coconut oil in a food processor.

Add in the stevia powder and any additional sweetening, and blend well.

Add in the raw cacao powder, raw eggs, vanilla extract, and sea salt. If you are using the cinnamon and hot smoked paprika, add them now too. Blend in the food processor until smooth.

Form into level-measuring-tablespoon-sized balls. Refrigerate until ready to eat.

Makes 48 balls. Serve naked or with fresh raw organic raspberries, or whatever strikes your fancy.
